Quercetin is a flavonoid — one of a large family of plant pigments — found in onions, apples, capers, berries, tea and leafy greens. It is among the most studied compounds in its class.

Nobody discovered quercetin in a laboratory and then went looking for it in food. It is the other way round: it is an ordinary part of a plant-rich diet, and supplemental forms concentrate what people already eat.
